Bok Choy Salad

Yummy! This salad is so unique and nutritious.
It's nice to change up lettuce for bok choy. The recipe has a dressing included which is soy sauce and rice vinegar based. It made quite a bit, so we've been putting it on salads the rest of the week.

There was a lot that went into making this little salad. You have to chop the bok choy and the green onions, toast the sliced almonds and mix up the dressing, all of which took me about 20 minutes.
We paired this salad with the potato soup and had a delicious soup and salad meal for dinner.
